Thinking about winter rolling in, and shoulder is great for stews, slow roasts, curries or shredded in a burger - cooking on the bone adds that extra unctuous flavour.  Achpopuli slow-grown, native-breed pasture-fed hogget has a punchy flavour so can be enhanced with a light seasoning, but can also stand up to a spicy marinade.  Either whole or half shoulders available.
