Juniper sausages

Handmade sausages using just grass-fed Achpopuli hogget/mutton and hand picked Achpopuli juniper, with salt, pepper and wine to season.  The juniper grows on the same slopes that feed the sheep, and the full flavour of the hogget marries beautifully with the fresh but fragrant taste of juniper.  There is no rusk in these sausages, so they are gluten free - but just be careful not to let them dry out when cooking.
